  • Chilling the burgers helps them hold their shape and develop a better crust.
  • Using lamb mince with around 20% fat gives the juiciest burgers.
  • The pickled onions can be made up to 3 weeks in advance and only improve with time.
  • Squeeze as much water as possible from the cucumber to keep the tzatziki thick and creamy.
  • Let the burgers rest for 3-4 minutes before assembling so the juices stay inside the meat rather than soaking into the bun.
