Ingredients: 1 kg Lamb mince - @macburnhamfamilybutchers; 2 tbsp Olive oil; 1 Large onion, diced; 1 Large carrot, diced; 1 Stick of celery, diced; 2 Cloves garlic, minced; 2 tbsp Worcestershire sauce; 1 1/2 tbsp Tomato paste; 2 Sprigs of fresh thyme, finely chopped; 1 Sprig fresh rosemary, finely chopped; 1 cup Red wine; 1 cup Chicken stock; 2 kg Potatoes (peeled and cut into chunks); 2 Egg yolks; 1/4 cup Cream; 4 tbsp Butter; 7 tbsp Parmesan cheese, grated; 1 cup Cheddar cheese, grated; Jar of pickled red cabbage to serve
