Turn cooking mode on

Step 1

Wash the potatoes well, then cut them into thick chips, keeping the skins on. Rinse off the starch, then place in a large pan of salted water. Bring to a simmer and cook for 8–10 minutes until just tender. Drain carefully and chill on a tray in the fridge for 30 minutes.
