Notes

If your mozzarella is particularly wet, pat it dry with kitchen paper before tearing it over the stew so the sauce stays rich. This tastes even better the next day once the flavours have had time to develop. Swap the butter beans for cannellini beans if that’s what you have in the cupboard. A handful of baby spinach stirred through for the final minute is a great way to add a little freshness. Finish with a little grated lemon zest just before serving for a brighter, summery finish.
