Step 1

Add the chicken thighs to a large bowl along with the garlic, ginger, lemon zest, lemon juice, olive oil, paprika, chilli powder, ground coriander, cinnamon, cumin, tomato purée, salt and pepper. Mix everything together well until the chicken is fully coated, then cover and leave to marinate for at least 2 hours, or overnight if you’ve got the time.
