Turn cooking mode on

Step 1

Add the potatoes to a large pan of well-salted water, bring to the boil and cook until tender. La Ratte potatoes work well, but new potatoes or Jersey Royals can also be used. Drain thoroughly, then toss while hot with 30g of the butter and a good pinch of salt. Keep warm.

I used La Ratte potatoes, but new potatoes or Jersey Royals work really well too.

I used thick double cream, which gives you a richer, thicker sauce straight away. If using standard double cream, just simmer it a little longer until you reach the consistency you want.
